In my home I have a few meat and potato guys. My two boys and of course my husband both love their hamburgers and meatloaf. I don’t use beef often but when I do I want to make sure that I am fixing options that are as healthy as possible. Here is a favorite meatloaf recipe that I prepare in my home when I am going the beef route.
1 cup of bell peppers , you choice
1 pound of Organic grass fed LEAN beef
2 cups of rinsed and precooked quinoa
3 eggs (this is your “glue”)
1/2 cup tomato paste
1/2 cup diced onion.
1tbs of minced garlic
Boiled and mashed potatoes (season with sea salt and onion powder)
Fresh boiled corn
Mix meatloaf ingredients in a bowl and bake in a non stick pan or use a healthy oil to prevent sticking @ 325 degrees for 30-45 min. I use a muffin in which makes bake time closer to 30 min. I love to top it with cilantro.
